This skillet recipe is a great way to use up holiday leftovers. The recipe listed is a Mexican skillet that calls for sausage but it’s just as good with chicken or beef. I made it with some leftover grilled chicken on Sunday and it may show up on our dinner table later in the week with some turkey. Hint, hint for Thanksgiving leftovers.

Thanksgiving in the City
We normally travel over Thanksgiving. But, this year we are planning on doing the Macy’s Thanksgiving Day Parade (pictures to follow) so we are staying in the city this year. I’ll be making the chicken and dressing that my “Nanny” always used to make us. So, as I cook this week I’ll be thinking of Maggie and other family far away. Enjoy your families this week and make some good memories.

It’s Christmastime!!!
I’m sure you’ve all realized it by now. It’s Christmas time!!!
Which means I’m winding up for Christmas…. decorating, shopping, crafting, baking, parties, field trips and special activities with the kids, cleaning for family visits, etc. And trying to stay healthy and well during all of it. It’s a busy time for me as I’m sure it is for all of you.
So, winding up to celebrate Christmas means winding down my blog a bit for this season.

Probiotic Chocolate “Pudding”
A new favorite for my kids. It’s not actually pudding mind you. But it’s very tasty and makes a great healthy dessert. Simply melt a handful of chocolate chips. (Try Enjoy Life Chocolate Chips if you need to avoid dairy, nuts or soy.) To cool the chocolate down a bit stir in a bit of cream, coconut oil, or almond milk depending on your dietary needs. Then mix in 2-3 heaping spoonfuls of your favorite yogurt. I like plain whole milk yogurt. And just like that you have a yummy mock chocolate pudding that is delicious and full of probiotic goodness. Eat up kids.
